The Spanish borrowed barbacoa from the Arawak people of the Caribbean.
The word described the large wooden frame that the Arawak used either to dry meat or to sleep on.
Around 1661, this same framework was found to be excellent for supporting whole animals for cooking over a fire, and the barbecue was born.
