The difference between thunderstorm warnings and thunderstorm watches is the same as a tornado watch and warning:

A thunderstorm watch means that all the ingredients are in place to possibly create a severe storm.

A warning means a storm of this magnitude has already been spotted, so take cover now! For more information, tune in to your favorite TV news broadcast.

Or if you prefer, AM or FM radio will work just as good.
